Pazham Pori-Pazha Bajji
Coated in a well-seasoned batter and fried to a deep golden colour — the crunch is the whole point. Serve with a cup of strong black tea and watch them disappear.
Ingredientsfor 2 servings
- 1 nos Bananas Ripe nendhram pazham
- 1 cup All purpose flour Maida
- 4 tbsp Sugar or according
- 4 nos Cardamom powdered/pounded (Elakka)
- Water about 2 cups
- Salt A pinch
- 10 Drops Yellow food color
- Oil — for deep frying
Preparation
Step 1
Get maida in a flat bottomed bowl.
Step 2
Add enough water to make a thick batter.
Step 3
Add sugar, cardamom powder, salt and food color and mix thoroughly making sure no lumps are formed.
Step 4
Cut the banana into half.
Step 5
Then cut them lengthwise into 4 strips.
Step 6
Warm the oil in a wok for fry in hot oiling.
Step 7
Dip the banana strips into the batter and fry in hot oil till done. :- Let them not change color too much. Remove when they start turning golden brown.
Step 8
Serve while still hot with tea. Tips:- :- you can add 2 sugar free tablets instead of sugar for diabetics and health conscious. Happy Cooking :).
Tip
Drain on a wire rack instead of paper towels — the rack keeps the bottom from getting steamy and losing its crispness.
