Pazham Nirachathu
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- Banana 5
- Coconut 1 cup
- Cashew nuts 10 to 15
- Dry grapes 10 to 15
- Cardamom powder 1 tsp
- Shallot 3
- All purpose flour 1 cup
- Milk 1 tablespoon
- Sugar 2 tablespoon or, to taste
- Salt, to taste
Preparation
Step 1
Get nuts,sliced shallots,grapes and cardamom powder in a plate.
Step 2
Add coconut to it.
Step 3
Mix everything well.
Step 4
Heat a pan and add the mixture to it.
Step 5
Give it a good stir and add sugar.
Step 6
Give it a good stir until the sugar melts. Then turn off the heat and let it cool.
Step 7
Get the all purpose flour and add salt to it.
Step 8
Pour water to make it a smooth batter.
Step 9
Pour little milk.
Step 10
Make a hole in the banana for filling.
Step 11
Then fill the coconut mixture to it.
Step 12
Then cover banana with the batter.
Step 13
Do same with all banana.
Step 14
When its covered fully.
Step 15
Heat a pan with oil to fry in hot oil.
Step 16
Next, add the stuffed banana to it.
Step 17
Let it become brown every side.
Step 18
When its brown transfer to the serving plate.
Step 19
Its very Snack,we can have it either hot or cold.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
