Pavakka Thoran | Bitter Gourd Stir Fry
Known for its unique blend of flavors, Pavakka Thoran dish combines the bitterness of pavakka (bitter gourd) with the aromatic goodness of grated coconut and spices.
Ingredientsfor 3 servings
- 2 nos Bitter gourd/Pavakka — cut into small pieces
- 4 nos Green chillies
- 1/4 tsp Turmeric powder
- 1/2 cup Coconut — grated
- Curry leaves, a few
- 1 tsp Mustard seeds
- Salt, to taste
- 2 tbsp Oil
- 4 nos Shallots
Preparation
Step 1
Wash the bitter gourd and slice it open. Discard the seeds and pith. Slice the bitter gourd into thin pieces.
Step 2
Pour oil into a pan and heat it, let the mustard seeds crackle and add chopped shallots and curry leaves. Let it cook for 5 minutes.
Step 3
When it turns lightly browned, add turmeric powder and salt. Stir in chopped pavakka pieces into the oil and Stir everything together thoroughly.
Step 4
Grind grated coconut and green chillies into a coarse mixture and add to the bitter gourd. Do not stir. Close with a lid and cook in low flame,.
Step 5
After a few minutes, remove lid and Fold everything together gently. Cook for another 2 minutes and remove pan from flame.
Step 6
Serve the delicious thoran with rice.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
