Pavakka Puliozhichu Koottu
A spicy, tangy flavored bitter gourd special that goes well with rice. The bitterness of bitter gourd is minimized with the presence of tamarind.
Ingredientsfor 4 servings
- 1/4 kg Bitter gourd — cut into small pieces, pavakka
- 1 cup Red gram (Thuvaraparippu)
- 4 nos Green chillies
- 1 Lemon Tamarind (Puli)
- 1 small Asafoetida (Kayam)
- 1/4 tsp Turmeric powder
- Salt, to taste
- 1/4 tsp Black pepper powder
- 2 tbsp Coconut — grated
- 1 tsp Coriander seeds Malli
- 1/2 tsp Fenugreek seeds (Uluva)
- 10 nos Dry red chillies (Kollamulaku)
- 1 tbsp Coconut oil
- For seasoning
- 1 tbsp Coconut oil
- 1 tsp Mustard seeds
- 1 - Dry red chillies (Kollamulaku)
- Curry leaves, a few
Preparation
Step 1
For preparing Pavakka Puliozhichu Kootu, first cook the red gram separately in a pressure cooker.
Step 2
Heat up a vessel.
Step 3
Add tamarind soaked in water along with green chillies, asafoetida, turmeric powder, salt and black pepper powder.
Step 4
Bring this mixture to a boil.
Step 5
Add bitter gourd pieces and allow it to cook.
Step 6
Pour oil into a pan and heat it.
Step 7
Fry fenugreek, coriander and dry red chillies.
Step 8
Grind this along with the grated coconut.
Step 9
Add the cooked red gram and this paste to the bitter gourd mixture.
Step 10
Allow it to cook for a few mins.
Step 11
When it comes to a boil, take it off the heat.
Step 12
Crackle some mustard seeds, red chillies and curry leaves in another small pan.
Step 13
Add the above seasoning into the bitter gourd mixture and Stir everything together thoroughly.
Step 14
Pavakka Puliozhichu Koottu is ready.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
