Pavakka Piralen
Bitter gourd cooked in tamarind extract and other ingredients to prepare piralen. Pavakka/bitter gourd is highly nutritious.
Ingredientsfor 4 servings
- 11/2 cup Bitter gourd sliced into small pieces, Pavakka
- 3/4 Dsp All purpose flour Maida
- 3/4 cup Shallots — sliced (Kunjulli)
- Tamarind squeeze out pulp by adding water
- Oil, to taste
- Salt, to taste
- 1 Dsp Chilly powder
- 1 Dsp Coriander powder
- 2 nos Shallots (Kunjulli)
- 3 Cloves Garlic
- 1/4 tsp Pepper
- 1/4 tsp Fenugreek powder (Uluva)
- 1/4 tsp Cumin seeds (Jeerakam)
- Turmeric powder A pinch
Preparation
Step 1
For preparing pavakka piralen, first make a paste with 3/4 dsp maida, required salt and little water.
Step 2
Smear this paste over the pavakka pieces and marinate for an hour.
Step 3
Squeeze out water from the pavakka pieces and set aside.
Step 4
Grind the ingredients to be ground: chilly powder, coriander, shallots, garlic, pepper, fenugreek powder, cumin seeds and turmeric powder to a fine paste.
Step 5
Warm the oil in a pan and fry the ground masala well. Add the squeezed pavakka pieces and sliced shallots. cook until pavakka pieces are almost cooked.
Step 6
Add tamarind pulp, required salt and little water. Allow the curry to boil and then simmer in low heat by covering with a lid.
Step 7
When the pavakka piralen becomes thick, remove from fire.
Step 8
Pavakka piralen, a highly nutritious recipe is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
