Pavakka Fry | Bitter Gourd Fry
Slow-roasted in coconut oil with a generous hand of spices, this bitter_gourd fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1 large Bitter gourd Pavakka
- 1 tbsp Chilly powder
- 1/2 tsp Turmeric
- 1 Tbsp+for frying Oil
- Salt, to taste
Preparation
Step 1
For preparing the fry, first cut bitter gourd into round shapes.
Step 2
Add red chilli powder, turmeric and salt and a tablespoon of coconut oil.
Step 3
Marinate and keep it for at least 1 hour.
Step 4
Fry in hot oil it in oil.
Step 5
Pavakka fry in hot oil is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
