Pavakka Chilli Fry
Pan-fried until the edges go dark and crispy, this bitter_gourd fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.

- Bitter gourd : 2 nos (cut into 4
- Onion : 1 no
- Chilli powder : 1 tsp
- Coriander powder : 2 tsp
- Garam masala crushed : 1 tsp
- Salt, to taste
Preparation
Step 1
Cut the bitter gourd into large four pieces.
Step 2
Remove the seeds from inside and clean well.3) Make a paste of onion, chilli powder, coriander and garam masala.
Step 3
Add required salt and Stir everything together thoroughly.5) Rub the masala into the bitter gourd and refrigerate for 10 minutes.
Step 4
Fry the bitter gourd in oil till crispy or done.
Step 5
Serve it.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
