Parippu Vada Restaurant Style
A styled South Indian snack, very popular and relished with a cup of hot tea. Vadas are prepared from ground dal, mixed with other spicy ingredients and deep fried in hot boiling oil.
Ingredientsfor 5 servings
- 2 cup Soak this for about 2 - 3 hrs., Redgram dal (Thuvara parippu)
- 6 nos Shallots big onion — also can be used, cheriya ulli
- Curry leaves, to taste
- 1 piece Ginger
- 4 nos Green chilli
Preparation
Step 1
For preparing the delicious snack, first clean the shallots, ginger, curry leaves and green chillies and cut them into small pieces and keep it separately.
Step 2
Wash the thuvara parippu 2 - 3 times and grind it in a mixer or wet grinder (add as less water as possible and also do not grind more time) and then take the ground thuvara parippu out and keep it in an utensil.
Step 3
Add the green chilli, ginger, curry leaves and shallot pieces with the ground thuvara parippu and mix it well, along with required quantity of salt.
Step 4
Heat the oil in a frying pan and make small sized balls of the ground thuvara parippu mix.
Step 5
Then flatten the balls by using a plastic paper / plantain leaf or on your palm and put it into the hot oil and fry it.
Step 6
The size of vada can be decided by the user.
Step 7
Parippu vada is ready and can be served with coffee / tea / butter-milk etc.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
