Pappadam Mezhukkupuratti | Stir Fried Pappadoms
A unique Kerala dish that transforms the humble pappadam (papad) into a deliciously crisp stir-fried side.
Ingredientsfor 4 servings
- 10 nos. Pappadam
- 7 nos. Shallots
- 1 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- 3 tbsp Grated coconut<strong> </strong>
Preparation
Step 1
Cut the pappadam into small pieces like.
Step 2
Fry the pappadam pieces in oil and set aside.
Step 3
Heat oil in a pan and let the mustard seeds crackle. Then add thinly sliced shallots and cook until it becomes lightly browned.
Step 4
Stir in chilly flakes and Let it cook for 2 minutes in low flame.
Step 5
Then add grated coconut and Continue cooking for 2 to 3 minutes.
Step 6
Add the fried pappadam in it and Stir everything together thoroughly. Lower the flame and let it go for 5 minutes and remove from fire.
Step 7
Tasty Pappadam Mezhukkupuratti is ready. Serve it as a side dish with rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
