Panikoorka Baji
Panikoorka has many medicinal uses, especially for the treatment of cough and sore throat. I came to know about this wonderful recipe from my uncle with surprise. I got lot of appreciation from my family for this awesome recipe.
Ingredientsfor 4 servings
- 10 To Panikoorka leaves
- 1 cup Channa powder kadala mavu
- 1/4 tsp Garam masala powder
- 1/2 tsp Chilli powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Ginger paste — optional
- Salt, to taste
- Oil — for frying
Preparation
Step 1
In a bowl, add all the powders, ginger paste and salt with required water to make a batter.
Step 2
Wash the leaves and pat dry it.Dip each leaves in the batter.
Step 3
Pour oil into a pan and heat it, fry each leaves on medium heat on both sides till it goes golden brown.
Step 4
Fantastic Panikoorka Baji is ready. Serve hot with tomato ketchup or mint chutney.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
