Palada Pradhaman
Palada Pradhaman involves cooking ada pieces in the base of your choice and adding the necessary spices to flavour it up. Traditionally, this ada is made from scratch but now you get to buy them readymade in the stores and that’s what I did.
Ingredientsfor 6 servings
- 1/2 cup Rice ada
- 500 ml Thin coconut milk
- 250 ml Water
- 11/4 cup Jaggery
- 1/2 tsp Cardamom powder
- 10 Cashewnuts and raisins
- 2 tsp Ghee
- Salt pinch
Preparation
Step 1
Bring water to rolling boil,switch off and add the ada.Let it soak for 30 minutes.heat 2 tsp of ghee in a pan and fry the cashew nits and raisins,set aside.
Step 2
Dissolve jaggery in half cup of water and strain it to remove impurities if any.
Step 3
Cook the rice ada in jaggery water until it thickens.
Step 4
Add coconut milk and a pinch of salt into it.cook on medium heat until it thickens again.
Step 5
Once it thickens add fried cashew nuts and raisins.Stir everything together thoroughly and turn off the heat.
Step 6
Delicious Ada pradaman is ready.serve hot or chilled.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
