Paal Puttu | Easy Breakfast
A beloved breakfast dish from Kerala that combines the subtle sweetness of coconut-infused rice flour with the creamy richness of sweetened milk.
Ingredientsfor 5 servings
- 2 cup Puttu podi
- 1 nos Carrot — grated
- 2 tbsp Milk powder
- 2 tbsp Sugar
- 2 pinch Salt
- Water, to taste
- 1+1/2 cup Coconut — grated
Preparation
Step 1
In a large bowl, place the puttu powder and salt. Stir everything together thoroughly.
Step 2
Sprinkle required water and make a crumble as for puttu. Cover and keep it for 10 minutes.
Step 3
Now mix it well with your hand, It should be a bread crumb consistency and not a dough. If you find that the mixture is slightly dry, add a little more water and mix.
Step 4
Add 1/2 cup grated coconut and grated carrot.
Step 5
Add sugar and milk powder.
Step 6
Fold everything together gently. Add 2 cups water to the bottom vessel of the puttu maker and allow to simmer till hot.
Step 7
Place the round perforated disc with holes inside the puttu mould such that it fits well at the bottom of the mould. Place 1 tbsp of grated coconut at the bottom of the puttu mould. Carefully and slowly pour 2 and half tablespoon of puttu powder from a height followed by another layer of 1 tbsp of grated coconut. Again layer with 2 1/2 tbsps of puttu powder and finish off with 1 tbsp of grated coconut on the top. Place the lid over the puttu mould and place the mould over the water vessel. Steam on high-medium heat for 5-6 mts and 4 mts on low heat.

Serve warm with a cup of tea.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
