Orotty
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 3 servings
- 2 cup Rice flour
- 1/2 cup Coconut — grated
- 1/2 cup Cooked rice
- 1 nos Onion finely chopped, big
- 2-3 nos Green chillies — finely chopped
- 1 tsp Ginger — grated
- 1 Spring Curry leaves
- 2-3 Springs Coriander leaves — finely chopped
- 1 nos Tomato — chopped
- 2 Pinches Garam masala
- Salt, to taste
- 1 tsp Vegetable oil
- Ghee/vegetable oil for sprinkling over orotty — optional
Preparation
Step 1
For preparing orotty, grind cooked rice into a fine paste. Set aside.
Step 2
Cook tomato adding a little oil and blend well.
Step 3
Add onion, green chillies, ginger and curry leaves. cook slightly.
Step 4
Mix all the ingredients except ghee and make a dough like that of chapathi.(you can add water if needed).
Step 5
Make small balls out of this dough. Flatten each ball into small circles and place over tawa and cook.(Sprinkle ghee/vegetable oil if needed).
Step 6
Orotty is ready. Serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
