Onion Sambar - Brahmin Special
Onion Sambar : Tuvar dal, shallots and other ingredients are cooked together.
Ingredientsfor 4 servings
- 2 cup Tuvar dal
- Tamarind lemon size
- 200 g Shallots (Kunjulli)
- 1 tsp Turmeric powder
- 2 tsp Sambar powder
- Asafoetida A pinch
- 4 tsp Coriander seeds dhania
- 3 tbsp Chana dal Kadala parippu
- 8 nos Red chilies
- 1/2 tbsp Fenugreek seeds (Uluva)
- 2 tsp Mustard seeds
- 1 cup Coconut — grated
- 4 tsp Coconut oil
- 2 tsp Ghee
- Salt, to taste
Preparation
Step 1
For preparing onion sambar - brahmin special, first wash tuvar dal and boil it with 3 cups of water and turmeric powder. Pressure cooker may be used. Fry coriander seeds(dhania), chana dal, fenugreek, and red chilly in coconut oil.
Step 2
Stir in grated coconut and fry again. Grind the mixture with sufficient water. Set aside.
Step 3
Soak tamarind in water for a few minutes(till it gets soaked completely). Squeeze the tamarind and pour this water into the vessel in which sambar is going to be made.
Step 4
Fry onion in ghee and put it into the vessel containing the tamarind water and then boil it by adding salt and turmeric.
Step 5
Add previously boiled dal and boil.
Step 6
Stir in the ground coconut mixture and cook again for a few minutes.
Step 7
Fry mustard seeds in coconut oil and pour into the mixture.
Step 8
Add curry leaves and coriander leaves for better flavor. Onion sambar - brahmin special, is ready.
Tip
The coconut paste is what makes Kerala sambar distinct from Tamil sambar. Grind it fresh — packaged coconut does not have the same effect.
