Onion Oothappam - A Variety Dosa
Crispy on the edges, soft in the middle — this onion oothappam - a variety dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 5 servings
- Rice ( ) : 1 cup (pachari)
- Urad dal (uzhunnu) : ½ cup
- Carrot : ½ cup
- Onion : ½ cup
- Garlic : 1 clove
- Ginger : 1 inch piece
- Spring onion : ½ cup
- Salt, to taste
- Green chilly : 2 nos
- Curry leaves : 1 spring
- Ghee or oil, to taste
Preparation
Step 1
Soak rice and urad dal for 2 hours and then grind it using a mixer.
Step 2
Then to this batter add garlic ginger and green chilly and curry leaves.

Grind the batter again and add salt as needed.

Heat a pan and add ghee or oil in it.
Step 6
Pour the smooth batter to it.
Step 7
Next, add the small sliced onion to it and close it for 2 minutes.

Then change the side (it is not necessary ).

Onion oothappam is ready to serve.

Then to the pan pour batter and then pour little of small sliced carrot and little onion.
Step 11
Reduce flame and close it for 2 to 3 minutes or until it gets cooked.

Serve while still hot, this can be taken with sambhar, chutney and without any curry also.

Then to the pan pour batter and then sliced spring onion and little onion.
Step 14
Close it for 2 to 3 minutes or until it gets cooked.
Step 15
Serve while still hot.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
