Old-Fashion Apple Sauce
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 5 servings
- Peeled, cored and quartered apples : 3 nos
- Water : ½ cup
- Vanilla essence : 1 tsp
- Lemon juice : 1 tsp
- Granulated sugar : 1/4 cup
Preparation

Remove skin of the apple and cut into small pieces.

Place them in a pan with the water, lemon juice and vanilla essence.

Bring to a boil, then turn the heat down to a simmer and cook uncovered for 30 minutes to break the apples down and to thicken the sauce, stirring occasionally.

Take it off the heat. Stir in the sugar.
Step 6
Let cool completely. Store in refrigerator. When ready to serve, sprinkle with some ground cinnamon if desired.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
