Olan Easy
Olan Kerala dish - Payar, elavan and mathan in coconut milk.
Ingredientsfor 4 servings
- 1/2 cup Black eyed beans Van payaru
- 2 cup White gourd chopped into thin slices of about 3 cm by 3 cm, Elavan
- 2 cup Yellow pumpkin chopped into thin slices of about 3 cm by 3 cm, Mathan
- 4 nos Green chillies — slit
- 1/2 cup Coconut — grated
- Curry leaves A, a few
- 1 tsp Coconut oil
- 1 tsp Cornflour
- Salt, to taste
Preparation
Step 1
Preparation Method of Olan : 1)Lightly roast the beans and soak it in water for 8 hrs. Wash & strain well.
Step 2
Extract 1/2 cup of thick milk and 1/2 cup of thin milk from the grated coconut.
Step 3
In a pressure pan, add beans, both vegetables, chillies and second coconut milk.
Step 4
Pressure cook upto 1 whistle.
Step 5
After opening the lid, add salt and thick milk mixed with cornflour.
Step 6
Simmer, stirring till the flour is cooked and all the ingredients are well blended.
Step 7
Add coconut oil and curry leaves.
Step 8
If you prefer the beans to be very soft, pressurise it first separately for 2-3 whistles and add. :- It is safer to add salt at the end to Olan because the volume shrinks after cooking and you can judge better.
Step 9
Olan is ready.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
