Niracha Rotiyum Muttayum
Soft, layered, and golden from the griddle — this niracha rotiyum muttayum is the perfect vehicle for scooping up thick curries and gravies. The dough rests until pliable, then gets cooked until each layer separates.
Ingredientsfor 4 servings
- 4 nos Eggs hardboiled
- 2 nos Bread slices
- 250 g Chicken
- 4 nos Onion — finely chopped
- Curry leaves
- Green chillies, to taste
- Ginger
- Coriander leaves
- Salt, to taste
- Coconut oil — for frying
Preparation
Step 1
Mince the chicken and cook it along with salt and chicken masala.
Step 2
Set a pan over medium heat and pour in the oil or a kadai.
Step 3
Add onions and sautT followed by finely chopped curry leaves, coriander leaves and ginger and sautT well.
Step 4
Add the cooked chicken and Stir everything together thoroughly.
Step 5
Cut the boiled eggs into two.
Step 6
Cut the bread slices diagonally.
Step 7
Make a small hole in the center of a bread piece and place a small portion of the chicken mixture and half of an egg in it.
Step 8
Place another bread piece over it and press it to make it firm.
Step 9
Dip them in maida batter and fry in coconut oil.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
