Nadan Special Uzhunnu Vada
A tasty snack that goes well and is a special delight with a cup of hot tea. Soft in the inside and crispy on the outside, Nadan Special Uzhunnu Vada is greatly relished by people of South India.
Ingredientsfor 4 servings
- 1 cup Urad dal
- 4 Green chilli
- 1/4 cup Onion — chopped
- 5 Curry leaf
- 1 tsp Salt
- 10 Black pepper corn
- 1 Ginger — finely chopped
- 1 pinch Baking soda
- 1 cup Oil to fry
Preparation
Step 1
Clean and soak urad dal for 2 hours in a bowl with 1 cup water. Drain water completely.
Step 2
Grind it to a smooth paste without adding water. If batter is so hard sprinkle little water. At the end batter has to be thick as possible.
Step 3
Add green chilies and curry leaves to batter.
Step 4
Add chopped onions, chilies, peppercorns, ginger chopped, salt, baking soda to this batter and Stir everything together thoroughly.
Step 5
Stir everything together thoroughly properly. Add 1 spoon rice powder to this and Stir everything together thoroughly for getting crispiness to vada.
Step 6
Keep a cup of water near by and wet the hands to prevent sticking of batter. Make round balls with palm and press gently. With finger we have to make a hole in center.
Step 7
Set a kadai over medium heat and pour in the oil and drop the round shaped batter to hot oil. Fry them for 5 minutes until it becomes golden brown.
Step 8
When this vada become brown in color it is ready to take from oil.
Step 9
Serve while still hot with chutney and sambhar.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
