Nadan Kaya Mezhukkupuratti
A classic Kerala thoran where banana meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 2 servings
- 1 cup Kaya/raw banana — chopped
- 2 tsp Coconut oil
- 1 tsp Salt
- 1 cup Water
- 1 Onion
- 1 tsp Mustard
- 4 Chilies
Preparation
Step 1
Cook chopped kaya in a cooker with water and salt.
Step 2
Let it cook for 5 minutes ie,2 whistles.Drain water and set aside.
Step 3
Pour oil into a kadai and heat it add mustard seeds.
Step 4
Add onions and Let it cook for 2 minutes.
Step 5
Add green chilies to this and Let it cook for 2 minutes.
Step 6
Next, add cooked kayas to kadai and Let it cook for 2 minutes.
Step 7
Now nadan kaya mezhukkupurati is ready.
Step 8
Now nadan kaya mezhukkupurati is ready to serve.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
