Nadan Kappa Biriyani
A slow-assembled beef biryani where each grain of rice carries the aroma of cardamom, clove, and slow-cooked masala. Served with raita and pickle, it is a complete meal on its own.
Ingredientsfor 4 servings
- 1/2 kg Tapioca — cut into medium pieces
- 1/2 kg Beef
- 2 nos Onion — sliced
- 2 nos Green chillies
- 1 piece Ginger — crushed
- 4 Cloves garlic — crushed
- 1/4 tsp Turmeric powder
- 2 tsp Chilly powder
- 1 tsp Coriander powder
- 1 tsp Pepper powder
- 1 tsp Garam masala
- Fennel powder A pinch (Perumjeerakam)
- 1/4 tsp Cinnamon powder Karugappata
- 1/4 tsp Cloves powder (Grambu)
- Curry leaves A, a few
- Salt As req
- 3 tsp Oil
Preparation
Step 1
Cook tapioca with salt, turmeric powder and water. Drain and set aside.
Step 2
Marinate beef with all the other ingredients except oil for 30 minutes.
Step 3
Cook it with required water. When it is done, add the cooked tapioca to it. Stir it well.
Step 4
After removing from flame, pour the oil on the top and Stir everything together thoroughly.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
