Nadan Carrot Thoran
A simple vegetarian dish very popular in almost all homes in Kerala, prepared as a side dish with rice. This is an easy to follow, delicious, carrot stir fry dish with grated coconut mixture.
Ingredientsfor 4 servings
- 2 cup Carrot chopped/grated
- 1 cup Coconut — grated
- 3 nos Green chillies
- 2 Cloves garlic
- 1 tsp Mustard
- Curry leaves, a few
- 1 tsp Turmeric
- Salt, to taste
Preparation
Step 1
For preparing the delicious thoran dish, cook carrot with turmeric and salt.
Step 2
Roughly crush grated coconut, chillies and garlic.
Step 3
Heat oil, allow to crackle mustard and curry leaves.
Step 4
Add coconut mixture and fry in low flame. Add the cooked carrot and Stir everything together thoroughly.
Step 5
The colorful nutritious thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
