Naadan Prawns Curry
This homestyle prawn curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 4 servings
- Prawns 1/4 kg
- Coconut pieces 1 cup
- Onion 1
- Green chilly 4
- Ginger 1 inch piece
- Tomato 1
- Chilly powder 1 or 2tsp
- Turmeric powder 1 tsp
- Salt, to taste
- Coconut milk 1 cup
Preparation
Step 1
Slice coconut in to small pieces.
Step 2
Heat a pan put oil and add coconut to it give it a good stir.
Step 3
Add green chilly, onion and ginger to it.
Step 4
Add tomato and cocum.
Step 5
Add prawns also.
Step 6
Give it a good stir.
Step 7
Add turmeric powder and chilly powder and cook it, stirring well,close the pan and allow it to get cooked.
Step 8
Add coconut milk.
Step 9
When it boils and mixed well.
Step 10
Off the fame and give it a good stir our dish is ready.
Step 11
Serve while still hot.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
