Naadan Aviyal Ready In Just 15 Minutes
A medley of vegetables cut into long batons, simmered until just tender, and bound with a rough-ground coconut paste and a spoonful of yogurt. Avial is the centrepiece of the Kerala Sadya and arguably its most loved dish.
Ingredientsfor 4 servings
- Vegetables : 1 cup
- Green chily : 4 nos
- Turmeric powder : 1 tsp
- Coconut : 1 cup
- Cumin seeds :1 tsp
- Shallot : 5 nos
- Mustard : 2 tsp
- Curd : ½ cup
- Salt, to taste
Preparation

Cook vegetables using turmeric powder salt and little water.

Grind and mix coconut,green chilly and cumin seeds using a mixer.

Then mix the matter with curd.

When vegetables get cooked add the mixed matter to it and reduce flame.

Give it a good stir and off flame.

Heat a pan add oil in it and add mustard when it gets hot.

When it allow to crackles add shallot to it and cook it, stirring well.

Then pour this matter to the vegetable.

Give it a good stir and its ready to serve.

Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
