Mutta-Muringakka (Egg) Aviyal
Mutta Muringakka Avial is a nutritious and tasty combination of vegetables and boiled eggs, cooked in a coconut mixture and later seasoned with curry leaves and coconut oil. A variant from the usual Avial dish, eggs with drumsticks paves way for an excellent combo.
Ingredientsfor 4 servings
- 4 nos Egg
- 3 nos Drumsticks cut in 1/2 inch pieces and slitted lenghwise
- 1 nos Onion thinly sliced lenghwise
- 1 nos Tomato cut lengthwise, small
- 3 nos Green chillies slitted
- 1/4 piece Mango cut lengthwise - — optional
- 1 Spring Curry leaves
- Salt, to taste
- 1 tsp Oil
- 1/2 cup Coconut — shredded
- 1 pinch Cumin/Jeera seeds
- 3 Springs Curryleaves
- 1/2 tsp Turmeric powder
- 1 tsp Chilli powder
Preparation
Step 1
Boil the eggs hard,remove from shell and cut into 4 pieces(cut lengthwise).
Step 2
Warm the oil in a pan.
Step 3
Add Onions, drumsticks, tomato,green chillies, mango and enough water(1/2 - 1 cup).
Step 4
Add 1/4 tsp turmeric powder, 1/2 tsp chilli powder and cook till drumsticks are well done.
Step 5
In a blender, grind all the ingredients mentioned in section to grind.
Step 6
Add the mix to the above pan and Stir everything together thoroughly let it go for 7 mts.
Step 7
Add egg pieces and mix gently without separating the yoik from egg whites.
Step 8
After 3 minutes, add 1 tsp oil to the curry and add fresh curry leaves and take it out of the stove.

Use potatoes instead off drumsticks also use the 3 main items(eggs, drumsticks and potato). All the combos came out excellent!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
