Mutta (Egg) Churul
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 4 servings
- 2 nos Egg
- 2 cup Plain flour maida
- Coconut, to taste — grated
- Sugar, to taste
- Salt a pinch
Preparation
Step 1
Make maida (plain flour) into a fine paste by mixing water, get a watery consistency.
Step 2
Beat the eggs and add it to maida.
Step 3
Season with salt.
Step 4
Pour this mix on a nonstick pan on a medium flame.
Step 5
Cook on both sides.
Step 6
Mix the grated coconut with sugar or jaggery.
Step 7
Keep this mix inside the dosa and roll it into a wrap. :- Serve hot!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
