Eggs cooked the Kerala way — with a rich masala of shallots, tomatoes, and spices. Fast enough for a weeknight, flavourful enough to feel like effort went in.
Ingredientsfor 4 servings
- 2 cup Allpurpose flour Maida
- 1 - Egg beaten
- 1/4 cup Milk
- 3/4 cup Water
- Salt, to taste
- 1/2 Of Coconut — grated
- 4 tsp Sugar
Preparation
Step 1
Mix together maida, beaten egg, water, milk and salt, to a running consistency.
Step 2
Heat a pan.
Step 3
Pour small quantity of batter to make dosa/pancake.
Step 4
Mix together grated coconut and sugar.
Step 5
Fill a tsp of coconut-sugar mixture in the dosa and roll it.
Step 6
Repeat the process, till the whole batter is used up.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
