Mushroom Upperi
Finely chopped mushroom stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 3 servings
- 1 Pack Button Mushroom
- 3 Pods Garlic
- Ginger Medium size
- 2 nos Big Onion medium size
- Pepper powder, to taste
- Salt, to taste
Preparation
Step 1
Cut onions,ginger and garlic into thin strips.
Step 2
Cut mushrooms ino four.
Step 3
Heat the oil in pan.
Step 4
Add onions nd cook until onions turn glassy.
Step 5
Add garlic and ginger and cook it, stirring for about 2 minutes.
Step 6
Add mushrooms and pepper cook well.
Step 7
Add salt after 2 minutes and cook for few more minutes.
Step 8
Delicious mushrooms is ready!
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
