Mushroom Stir Fry
Mushroom, onion and other ingredients are combined together and cooked.
Ingredientsfor 4 servings
- 150 g Mushrooms — cut into quarters
- 6 tbsp Tomato
- 3/4 cup Onion — chopped
- 11/4 tbsp Ginger — chopped
- 1/2 tsp Green chilly — chopped
- 1/2 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1 tsp Curry powder
- 1/4 tsp Turmeric powder
- 1 tsp Cumin powder
- 1/2 tsp Garam masala
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/2 tbsp Coriander leaves — chopped
- 1 tbsp Oil
- Salt, to taste
Preparation
Step 1
Crackle the cumin seeds in hot oil and add chopped onion, ginger and green chillies. cook well.
Step 2
Add chilly powder, turmeric powder, coriander powder, cumin powder, curry powder and salt. cook for a minute.
Step 3
Stir in the chopped tomatoes and mushrooms.
Step 4
Stir everything together thoroughly and Put the lid on and cook for 8 minutes in low flame.
Step 5
Add garam masala and fry in high flame for 3 more minutes.

Step 7
Garnish with chopped coriander and serve hot.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
