Mushroom Masala | Koon Masala
This mushroom, also known as Koon Masala in Kerala, is a rich and flavorful vegetarian dish that appeals to all palates.
Ingredientsfor 2 servings
- 250 g Mushroom Koon
- 1/2 cup Fresh Tomato Paste
- 1/4 cup Onion — chopped
- 3 tsp Red Chilli Powder
- 2 nos Green Chilli (sliced
- 1/2 tsp Turmeric Powder
- 2 tsp Coriander powder
- 3 tsp Coriander leaves — chopped
- Coconut/Refined Oil, as needed
- Salt, as needed
Preparation
Step 1
Clean the button mushrooms(koon) and put them for some time in medium hot water. Take out the mushrooms from water and remove water by pressing the mushrooms well. Slice the mushrooms into medium sized pieces. Set aside.
Step 2
Heat the oil in a frying pan or cheenachatti and then add the chopped onion. You can also add some chopped garlic pieces along with the onion. Stir in medium flame till the onion goes golden brown.
Step 3
Add the tomato paste and keep stirring. Cook the mix for another 5 minutes in medium flame.
Step 4
Next, add red chilli powder, turmeric powder, coriander powder and required quantity of salt. cook in low flame till the raw smell disappears.
Step 5
After about 2 minutes, add the mushroom pieces into this mix. Stir and Stir everything together thoroughly. Cover with a lid and cook in low flame till the mushrooms are cooked properly. Do not add water, the mushroom has to cook in its own juice.
Step 6
When the mushroom pieces are cooked properly, turn off the heat. Stir the mix again and add chopped coriander leaves. Mushroom Masala is ready.
Step 7
If required, you can also garnish the Mushroom Masala with onion pieces. Serve with chappathi/poori/cooked rice.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
