Mushroom Fry
A proper Kerala fry — mushroom tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 25 nos Mushrooms Button
- 1 nos Onion medium
- 3 nos Garlic pods
- 1 - Green chilly pepper
- 1 tsp Red chilly powder
- Turmeric powder A pinch
- Salt, to taste
- 3 tsp Oil
Preparation
Step 1
Clean the mushrooms with a paper towel and slice them.
Step 2
Do not wash the store-bought mushrooms in water as they get water logged.
Step 3
Slice the onion to 1/4 inch thin slices. Thinly slice the garlic and cut the green chilly pepper into round thin slices.
Step 4
Heat the oil in a saucepan.
Step 5
When it is warm, add the sliced onion and sautT till the slices become transparent.
Step 6
Add garlic and chilly pepper slices and mix the contents. Let it heat up for 2 minutes.
Step 7
Add red chilly powder and turmeric and Stir everything together thoroughly.
Step 8
Add required amount of salt, Put the lid on and cook them for a minute or two.
Step 9
Add the sliced mushrooms to this and Stir everything together thoroughly.
Step 10
Cover the pan and Let it cook for 2 minutes.
Step 11
Remove the cover and let it get fried by stirring the contents occasionally(5 -6 minutes).
Step 12
When the oil starts to sizzle around the mushroom slices, Mushroom fry is done.
Step 13
Serve Mushroom fry with rice.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
