Muringayila Koottaan | Drumstick Leaves Stir Fry
Muringayila Koottaan prepared from drumstick leaves is a styled nutritious dish. Drumstick leaves can ward off all infectious diseases and can keep you healthy. The dish is unique and with drumstick leaves cooked in a spicy coconut mixture.
Ingredientsfor 2 servings
- 2 cup Murungayila/drumstick leaves
- 1/2 tsp Turmeric powder
- 4-5 Red chillies
- 1 tsp Mustard
- 1 tsp Cumin seeds
- 1 cup Coconut — grated
- 3 nos Shallots
- 2 Garlic
- Salt, to taste
- 2-3 tsp Coconut oil
Preparation
Step 1
For preparing Muringayila Koottaan, first remove the Muringayila (Drumstick leaves) from the stem, clean and keep the leaves aside. Wash the leaves well before preparation.
Step 2
Grind the Coconut along with Shallots, garlic, turmeric Powder and cumin seeds together along with some Water and keep this paste separately.
Step 3
Heat the oil in a Cheenachatti/Frying Paan, burst the Mustard Seeds in this hot Oil. Add the Red Chilli pieces also and stir it.
Step 4
Add the Muringayila into this fried Mustard Seeds and Red Chilli pieces and stir it well.
Step 5
When the Muringayila (Drumstick leaves) are cooked properly add the Coconut paste and stir the Stir everything together thoroughly.
Step 6
When colour of the mix turns into Golden/Brown, add required quantity of Water and Salt and boil it for some time at low flame.
Step 7
Simple Muringayila (Drumstick leaves) Koottaan is ready. This Koottaan can be served with Cooked Rice/Chappathi/Poori/Dosa etc. This is an easy to prepare dish. Note down Muringayila Koottaan in your menu plan and should be prepared at least once a week for a healthy life style.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
