Muringakka Thoran
A tasty vegetarian dish in Kerala Cuisine very able with white steamed rice. Even those who hate drumsticks will Muringakka Thoran.
Ingredientsfor 2 servings
- 3 nos Drumstick tender ones, Muringakka
- 15 nos Small onions do not slice (Kunjulli)
- 1/2 Of Grated coconut
- Mustard seeds A pinch
- 3 nos Dry red chilly (Kollamulaku)
- 1/2 tsp Turmeric powder
- 1/2 tsp Chilly powder
- Salt, to taste
- Oil
Preparation
Step 1
For preparing Muringakka Thoran, take a knife and peel the skin off the drumsticks. Wash them and cut them into finger length pieces. Cut them across and set aside.
Step 2
Add turmeric powder, chilly powder and salt to the grated coconut and mix them well. Set aside.
Step 3
Set a pan over medium heat and pour in the oil or a kadai.
Step 4
Add mustard seeds and when they crackle, add the dry red chillies.
Step 5
Add small onions and squash the baby onions, just to make them out of shape.
Step 6
Once the onions goes golden brown, add the cut drumsticks.
Step 7
Add 1/2 cup water along with salt and close the pan.
Step 8
Allow the drumsticks to get cooked(approx 10-12 minutes, till the entire water is vapourized).
Step 9
Add the grated coconut mixture to this.
Step 10
Sauté, till the raw smell of turmeric is gone.
Step 11
Serve Muringakka Thoran hot with lunch or dinner.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
