Ingredientsfor 4 servings
- 10 nos Small onions (Kunjulli)
- 3 nos Green chillies
- 1/4 tsp Fenugreek (Uluva)
- 1/2 tsp Mustard seeds
- 2 sprig Curry leaves
- Tamarind juice — soaked in 1 cup of water (Puli)
- Jaggery A small piece (Sharkkara)
- Salt, to taste
- 2 tsp Oil
Preparation
Step 1
Pour oil into a pan and heat it or a kadai.
Step 2
Let the mustard seeds crackle.
Step 3
Add fenugreek and curry leaves.
Step 4
Add chopped onion and green chillies and sauté.
Step 5
Add tamarind juice.
Step 6
When it starts to froth, add jaggery(optional).
Step 7
Take it off the heat.
Step 8
Goes well with hot and steamy rice.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
