Morukoottan - Brahmin Special
Cucumber with buttermilk, coconut and other ingredients are cooked together.
Ingredientsfor 4 servings
- 250 g Cucumber Vellirikka
- 1 tsp Turmeric powder
- 2 cup Coconut — grated
- 6 nos Green chillies
- 1 small Jaggery Sharkara
- 1 cup Buttermilk slightly soured
- 1 tsp Mustard seeds
- 1/2 tbsp Fenugreek seeds (Uluva)
- 1 nos Red chilly
- 2 tsp Coconut oil
- Salt, to taste
Preparation
Step 1
For preparing morukootan - brahmin special, wash cucumber after cutting into small pieces and boil it with sufficient quantity of water and add turmeric powder and salt. Set aside.
Step 2
Grind the grated coconut with green chillies with sufficient quantity of water.
Step 3
Add the ground coconut mixture to the previously cooked cucumber and boil for few minutes in low heat. Add jaggery to this.
Step 4
Add soured buttermilk.
Step 5
Cook for sometime. This mixture will get foam after sometime. Do not boil this. When the foam comes stop cooking.
Step 6
Fry mustard seeds, fenugreek seeds and red chilly and add this to the cooked mixture.
Step 7
Add curry leaves.
Step 8
Morukootan - brahmin special recipe, is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
