Mixed Vegetable Dosa
Crispy on the edges, soft in the middle — this mixed vegetable dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 3 servings
- Dosa batter, to taste
- 11/2 cup Mixed vegetables
- 1 tsp Ginger paste
- 1 nos Onion — chopped
- 1 nos Tomato — chopped
- 1 tsp Turmeric powder
- 1 tsp Chilly powder
- 1 tsp Cumin powder
- 1 tsp Pav bhaji masala
- Salt, to taste
- Coriander leaves, to taste
Preparation
Step 1
For preparing mixed vegetable dosa, Heat the oil in a pan, add ginger paste and onion.
Step 2
Fry well.
Step 3
Add tomato and vegetables.
Step 4
Add turmeric, chilly, cumin and pav bhaji masala. Add salt and fry.
Step 5
Add water and cook vegetables.
Step 6
When done, mash the veggies well.
Step 7
Make it as a topping to dosa and serve hot.

Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
