Microwaved Bittergourd Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 5 - Bittergourd Remember it is going to shrink so take more bittergourds if required
- 1 tsp Chilli powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Coriander powder
- Salt, to taste
- Pepper A pinch, powder/crushed
Preparation
Step 1
Clean the bittergourd and take out the rough skin and edges from it.
Step 2
Make a slit along the length and take out the seeds and clean the insides.
Step 3
Cut the bittergourd as round thin circles (not very thin).
Step 4
Add all the ingredients specified other than the bittergourd to water to make a thick paste.
Step 5
Marinate the bittergourd with this paste and leave for an hour atleast or more.
Step 6
Get a microwavable plate (I usually use a pyrex pie pan) and spray/rub some oil on the pan.
Step 7
Layer the bittergourd pieces on the plate and microwave for 20 - 30 minutes or more depending on how crispy you want it.
Step 8
Remember to keep checking the pieces every 10 min or so to make sure all pieces are cooked evenly.
Step 9
Your pavakya fry is ready with very very less oil. !
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
