Mashed Potato Stew | Creamy Potato Dish

Ingredientsfor 4 servings
- 3 nos Potatoes Medium
- 1 nos Onion Large
- 1 tsp Ginger garlic paste
- 3 nos Green chilly
- 1 cup Thick Coconut milk
- 1 cup Thin coconut milk
- 1 tsp Pepper powder
- 5 nos Cashew nuts
- 5 nos Raisins
- 3 nos Cardamom
- 1 piece Cinnamon stick
- 3 nos Cloves
- 1 tbsp Ghee
- Curry leaves, a few
- 1 tbsp Oil
- Salt, as needed
Preparation
Step 1
Cook the potato by adding required salt and enough water. Mash potatoes. Set aside.
Step 2
Warm the oil in a pan and add clove, cardamom and cinnamon stick.
Step 3
Add sliced onion.
Step 4
Add green chilly and ginger garlic paste. Let it cook for 5 minutes.
Step 5
Next, add cooked and mashed potatoes. Stir everything together thoroughly and add pepper powder.
Step 6
Add thin coconut milk and Continue cooking for 4 to 5 minutes.
Step 7
Finally add thick coconut milk, curry leaves and Fold everything together gently. Adjust the salt. When it starts to boil, take it off the heat.
Step 8
Finally heat ghee in a skillet, fry cashew nuts and raisins, pour over the curry. Delicious creamy potato stew is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
