Mango Pachadi
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 5 servings
- 1 nos Raw mango peeled and — cut into small pieces, medium
- 1/2 cup Coconut — grated
- 3 - Green chillies
- 1 tsp Cumin seeds (Jeerakam)
- 1 tsp Mustard seeds
- 1/2 tsp Sugar
- Turmeric powder A pinch
- Salt, to taste
- 1 tbsp Oil
- 1 tsp Mustard seeds
- Curry leaves A, a few
Preparation
Step 1
Cook the mango pieces with turmeric, salt and enough water to cook the mango.
Step 2
Mash it and set aside.
Step 3
Grind together coconut, cumin seeds, green chillies and mustard seeds into a fine paste by adding little water.
Step 4
Add the ground paste to the mashed mango and Stir everything together thoroughly.
Step 5
Cook it again by adding little water, if necessary.
Step 6
Add sugar and Stir everything together thoroughly.
Step 7
Check the level of salt and add, if necessary.
Step 8
When it becomes a paste like consistency, turn off the heat.
Step 9
Heat the oil in a small pan.
Step 10
Let the mustard seeds crackle and fry curry leaves for a minute.
Step 11
Add the above seasoning into the above mango-coconut paste.
Step 12
Goes well with rice.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
