Manga Unakkiyathu
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 5 servings
- 10 nos Raw mango
- 3 tbsp Chilly powder
- 1 tsp Fenugreek seeds
- 1 tsp Mustard
- Salt, to taste
Preparation
Step 1
Cut raw mango into small pieces.
Step 2
Add salt, chilly powder, grinded fenugreek seeds and mustard and mix it well.
Step 3
Dry it in sun light for 5-6 days.
Step 4
You can add this to curries for taste.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
