Manga Inji Pachadi
A traditional Kerala Sadya dish that carries the flavours of coconut, yogurt, and carefully balanced spices. Each component of the feast has its role, and this one brings a quiet, essential balance to the banana leaf.
Ingredientsfor 4 servings
- 100 g Manga inji
- 4 nos Green chillies
- 1/2 cup Coconut — grated
- 1/4 cup Curd
- 2 tsp Mustard seeds
- 2 nos Red chillies
- 1 tsp Coconut oil
- Salt, to taste
Preparation
Step 1
For preparing manga inji pachadi, cut manga-inchi and green chillies into small pieces.
Step 2
Grind the grated coconut and the mustard seeds(only 1 teaspoon). Add curd and salt. Stir everything together thoroughly.
Step 3
Fry the remaining mustard seeds (one teaspoon) and red chillies in coconut oil.
Step 4
Add chopped manga inji and green chillies and fry again.
Step 5
Add the ground coconut and mix it well.
Step 6
Manga inchi pachadi is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
