Malabar Unnakkai
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 250 g Ripe bananas (Ethakka)
- 1 tbsp Cashew nuts broken
- 1 tbsp Raisins Unakka munthiri
- 11/2 tbsp Sugar
- 1 nos Egg beaten
- Cardamom powder A pinch (Elakka)
- 1/2 tbsp Ghee
- Oil — for frying
Preparation
Step 1
Steam the bananas. Cool and remove black pith.
Step 2
Mash the bananas well and add 1 tbsp of sugar. Stir everything together thoroughly and set aside.
Step 3
Place a pan on the stove and pour ghee. Heat the ghee and fry cashew nuts and raisins.
Step 4
Add remaining sugar. When sugar melts, add beaten egg and cardamom powder. Leave the filling batter to cool.
Step 5
Make lime sized balls with the mashed banana.
Step 6
Get each ball and flatten with your palm. Put the filling and roll into round shapes.
Step 7
Place a pan on the stove and pour sufficient oil for frying. Heat the oil and fry in hot oil the entire unnakkai until golden in color.
Step 8
Malabar unnakkai, a tea time snack is ready and serve hot.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
