Malabar Thenga Choru
A variant from the usual Biriyani and is regarded as poor man’s biriyani. A tasty dish that goes great with beef dishes as an accompaniment. best served and ed for small functions and occasions.
Ingredientsfor 8 servings
- 1 kg Parboiled rice/puzhukalari
- Shallots, a few
- 1 nos Coconut — grated
- 1/2 tsp Turmeric powder
- 1 tsp Fennel seeds
- 1/2 tsp Fenugreek seeds
- 1 Hand Curry leaves
- Salt, to taste
Preparation
Step 1
For preparing Malabar Thenga Choru, first wash the rice well and drain it.
Step 2
Heat water in a vessel along with grated coconut, chopped shallots, cumin seeds and fenugreek seeds.
Step 3
When it starts to boil, add rice and salt to taste.
Step 4
Give it a stir now and then and let it go for 40-45 minutes.
Step 5
Add curry leaves and put the flame in simmer mode to dry if it is wet.
Step 6
Serve Malabar Thenga Choru hot with beef curry.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
