Malabar Style Thadicha Pathiri
A recipe still made in most muslim families of malabar area.
Ingredientsfor 5 servings
- 2 cup Rice flour
- Water, to taste
- Salt, to taste
- Coconut oil, to taste
Preparation
Step 1
Pour hot water (mixed with salt) to the rice flour and mix it well with a spoon.
Step 2
Heat a pan and wipe it with a cloth covered in coconut oil.
Step 3
Get a small quantity from the dough and make it a fine sphere. Press it lightly on your hand.
Step 4
Press it on the pan directly with your hand and turn it over as soon as it attain the shape.
Step 5
Place two more pathiris on the pan in the same way.
Step 6
In the meantime the pathiris get cooked you can make some more spheres ready to be pressed.
Step 7
Turn it over when one side gets well cooked.
Step 8
Get it from flame and repeat the procedure from wiping the pan.
Step 9
Serve it with chicken curry, beef curry or anything you feel like.
Tip
Resting the dough is not optional — it relaxes the gluten and makes the dough easier to roll. At least 30 minutes, ideally longer.
