Malabar Style Pepper Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 4 servings
- 1 kg Chicken
- 2 nos Onion medium size
- 5 tbsp Pepper powder
- 1 tsp Turmeric powder
- Salt, to taste
- 2 tbsp Oil
- 10 Leaves Curry leaves
Preparation
Step 1
Cut chicken into small pieces.
Step 2
Crush the onions.
Step 3
Add crushed onion, salt, pepper powder, and turmeric powder on the chicken pieces.
Step 4
Stir everything together thoroughly and set aside for 30 minutes.
Step 5
Place a pan on the stove. Heat the pan and put the marinated chicken pieces. Cover with a lid and cook in low flame.
Step 6
When the chicken pieces are fully dry add curry leaves and oil.
Step 7
Your chicken dish is ready. Serve hot.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
