Malabar Kaipola
Kaipola is a tea time snack with the main ingredient as banana. Apt for festival occasions.
Ingredientsfor 2 servings
- 1 nos Banana — cut into cubes, ripe
- 3 nos Eggs
- 11/2 tbsp Cashew nuts broken
- 1 tbsp Raisins
- 1/4 cup Sugar
- 2 Pods Cardamom — powdered
- 1 tbsp Ghee
- Coconut oil As reqd — for frying
Preparation
Step 1
Get a frying pan and pour coconut oil. Heat the pan and fry cashew nuts and raisins till golden.
Step 2
Fry the banana cubes in the same coconut oil.
Step 3
Mix the fried banana cubes, cashew nuts and raisins.
Step 4
Beat the eggs and add sugar and beat again until frothy.
Step 5
Smear some ghee in a baking tray and pour a portion of the egg mixture.
Step 6
Add the banana mixture and pour the remaining egg mixture on top.
Step 7
Sprinkle cardamom powder on top and bake in an oven for 20 minutes.
Step 8
Malabar kaipola is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
