Malabar Eethappazham Pori (date Fritters)
A tea time snack made by stuffing cashew nuts into slit dates and deep fried.
Ingredientsfor 3 servings
- 200 g Dates
- 50 g Cashew nuts split
- 1 Egg
- 1/4 Coconut — grated
- 1 tbsp Sugar
- 400 g All purpose flour Maida
- Oil As reqd — for frying
- Salt, to taste
Preparation
Step 1
Make a thick batter of egg, coconut, sugar, maida and required salt.
Step 2
Slit the dates and remove seeds.
Step 3
Stuff the cashew nuts inside dates.
Step 4
Dip the dates in this batter and fry in hot oil till golden in color.
Step 5
Malabar eethappazham pori is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
