Madakku Appam
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 2 servings
- 1 cup Wheat/Maida All purpose flour
- 1 cup Coconut — grated
- 1 cup Jaggery/Sugar — grated
- 1/4 tsp Cardamom powder (Elakka)
- 1 nos Egg
- Salt, to taste
- 2 tsp Sugar
- Oil/ghee, to taste
Preparation
Step 1
Mix together coconut, jaggery and cardamom. Set aside.
Step 2
Make a dosa consistency batter by mixing together wheat flour, egg, salt, sugar and required water.
Step 3
On a hot tava(pan), apply ghee. Pour the batter and make a dosa. Put some ghee on the sides and roast it.
Step 4
When both the sides are done, add the sweet mixture and fold to one side. Roast again for a few seconds and take out of the flame. Serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
