Preparation
Step 1
For preparing Mackerel(Ayeela) Stuffed Fry, first mash the boiled potatoes and mix along with rest of the ingredients required for stuffing: pepper, ginger-garlic paste, green chillies and salt. Keep the potato mixture aside.
Step 2
Clean the fish nicely and make a straight slit in the centre (lengthwise) so that it opens in 2 halves. Do not seperate them.
Step 3
Make small slits on the top of the fish for the masala to get into the flesh.
Step 4
Stuff the fish with the mashed potato mixture and keep the sides close together, so that the stuffing does not come out.
Step 5
Mix all the ingredients for marination and rub the mixture on the fish nicely even on the sides where the opening is.
Step 6
Do not rub this mixture on the inside of the fish along with the stuffing.
Step 7
Keep the fish pieces aside for 10 - 15 minutes.
Step 8
Heat a little oil in a pan.
Step 9
Fry the stuffed mackerel fish keeping the pan closed. Do not break the fish.
Step 10
When Mackerel (Ayeela) Stuffed Fry is browned and done, remove from fire.
Step 11
Garnish with onions and vinegar.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
