Long Beans-Payar Mezhukkuperatti
Simple, honest, and on every Kerala lunch plate — beans thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 1/2 kg Long beans/payar
- 1 nos Onion — chopped
- 4 nos Dry red chillies
- 1 tsp Turmeric powder
- Coconut oil, to taste
- 1 tsp Mustard seeds
- Curry leaves, a few
- 2 Cloves Garlic
- Salt, to taste
Preparation
Step 1
For preparing long beans/payar mezhukkuperatti, crush onion, red chillies and garlic.
Step 2
2)Cook long beans with salt and turmeric.
Step 3
Pour oil into a pan and heat it, let the mustard seeds crackle, curry leaves. Add the crushed onion and turmeric powder.
Step 4
Add the long beans and fry well.
Step 5
Long beans/payar mezhukkuperatti is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
